Moin,

die Abtastrate gibt die Häufigkeit an, mit der ein Signal je Zeitintervall abgetastet wird. Die Einheit ist Hz (Hertz).
Eine hohe Abtastrate, und damit hohe Abtastfrequenz, ist wichtig, da die efassten Frequenzen deutlich kleiner als die Abtastfrequenz sind.
